Hey friends!
It's no joke that I need to become healthier and lose some of these pounds that are quite literally and figuratively, weighing me down.
Part of my problem is I simply don't take the time for myself to ensure I get a healthy lunch packed. I'm fairly consistent with adding more healthy items to our dinners and I usually eat eggs from my chickens for breakfast. But lunch is nearly always eaten out, and not at the healthiest of places :/
Last night, if you're following my Instagram feed you may have seen my salad for today... actually took the time to make it last night! And the care and time I took into doing that is what I most enjoyed! Plus I had something to look forward to today. It made me a happy lady.
Here's what's in my- mostly raw-
Happy salad:
Baby spinach
musclan (sp?) greens
Raw sliced zucchini (swear I could eat this everyday)
Grape tomatoes
Raw bite-size broccoli
A little freshly cracked black pepper and sea salt
A little sprinkle of low fat cheese
A small amount of Caesar dressing
(need a little fat to keep me satisfied)

I love salads, but I hate putting them together. I love little bit of everything in my salad I will mix fruits and veggies together and I love topping it with sunflower seeds

ReplyDeleteThank you! It really was one of my favorites I've ever made. I love, love, love raw zucchini. I first started eating it raw after I tried Giada's recipe of raw zucchini ribbons with lemon and cracked pepper and sea salt. Love that salad for spring and summer gatherings! Oh Yummmmyy! I love caesar dressing - and you're so right, I'm all about keeping a little bit of fat to keep me satisfied :) I always add a hard boiled egg too!

This looks wonderful!!! I want one now! I had PB&J on a tortilla:( BOO. I will 100% clean eating as soon as the baby arrives though so I suppose I should enjoy my yucky food!
