Sunday Post: Yummy Brunch Eggs

Good day, friends!

Today I made a yummy brunch eggs dish with leftover veggies from last night's dinner.

I'm using leftover sautéed mushrooms, shallots and garlic, as well as my leftover roasted asparagus.

I first reheated my veggies in my frying pan and then added two whisked eggs. Once my egg was cooked through, I plated my eggs and topped them with creamy Brie slices, as well as fresh oregano and Italian parsley from my garden... and freshly cracked black pepper! Yum!
